Rye

BIBLIOGRAPHY

A cultivated grain, Secale cereale, domesticated from species found wild in Southern Europe, Asia, and the Middle East. Rye, originally seen as a weed, is a relatively recent addition to domestication. It was brought to North America by the Dutch and English, where it is grown in all regions of the United States. It is used in breads, alcohol, as animal feed, for straw, and as a cover crop to preserve nutrients in the soil.
